I HATE COOKING and I hate meal prepping. It is one of my worst features. I would do anything to get out of it if I could. I am not the healthiest eater since I do not like to cook so I eat fast food or carbs. 

Since all this pandemic has happened, it has been near impossible to get groceries. I typically order my groceries online, and it takes WEEKS to get them now. I was thinking of how to get the food that I need. I was doing local carry out for a little while as well, but I just felt like something was missing and it was getting repetitive. When you are stuck in quarantine you constantly want to eat and eat junk.

Family Meals On The Go

In this article, I will give you a few tips that I use to feed my family on the go, stretch my family’s grocery budget, all while maintaining a healthy lifestyle.  I have a typical family size, five people; myself, my husband, two sons and a daughter. We are grazers.  We like to eat small portions of food throughout the day. Which mostly keeps us satisfied.  I do cook dinner every evening.  On a normal week, our family’s activities include five days of therapy for my son who has Autism and gymnastics for my daughter. My normal is probably most peoples, busy. 

I use Sundays to meal prep for the entire week.  I juice fruits and veggies for my husband, make breakfast sandwiches, and snack items for the children.  I have not started to meal prep dinners because… I have no clue why.  For lunch during the weekdays my husband takes a juice that I prepare in our swanky Breville Juicer.  I love this juicer because it is easy to use, easy to clean, and it is durable.  I purchased it on Amazon along with glass bottles to store the juice. I use a simple recipe that includes kale, spinach, apples, lemon, cucumbers, ginger and celery.  I prepare enough for the week, freeze them and take them out daily for his lunch.  The items cost about $20, which is less than eating out daily.

  • For breakfast meal prep, I make a variety of foods. Today I’m going to talk about breakfast sandwiches.  I usually make breakfast sandwiches with English muffins, every now and then I use bagels, but I feel like they are often too heavy to eat every day. I use a recipe called Morning Muffin Makers from Allrecipes, it is easy and cost effective. You can swap out the items as you please, this recipe is fail proof. Check out the link below!
  • I love prepping snacks, it’s my favorite, and the options are endless! My children will pretty much eat any snack food you put in front of them! The meal prep containers I use are small and colorful.  I purchased them on Amazon.  If you haven’t noticed by now, I kind of an Amazon Prime mom! When I prep the kids’ snacks for the week, I rotate between cold and room temperature snacks. Our refrigerator space is limited, I try to do all cold snack items one week and all room temperature items the next.  Cold items are usually a yogurt or cheese, some pepperoni or salami and a fruit or veggie.  Room temperature snacks consist of crackers or Chex Mix, Raisins or Prunes, and beef jerky. These are a great after school snacks, it’s budget friendly and will suffice their appetites until dinner time.
  • Although, I currently do not prep my dinners for the week, I do try to plan what I will cook.  Some days I will put a frozen London Broil in the crockpot with some veggies and make potatoes or rice as a side dish.  I am sort of envious of all the Instant Pot hype I’ve been seeing. What do you think? Should I dive in, or will I have an Instant Pout?
  • A few tricks or alternatives when grocery shopping can often save some families hundreds of dollars per month.  Using coupons, I believe, is the number one way to save during your shopping trips.  You can get coupons from your local Sunday Newspaper, Coupons.com, and many stores have a loyalty card that can be used for increased savings. Make a meal plan prior to going shopping.  If you have a visual note of exactly what you need, you’ll less likely buy junk food or other random unneeded items. Try to limit your shopping around the 1st and the 15th of every month.  My husband gets paid around those dates and the price of food is usually a little higher at this time.  I like to shop on the weeks outside of payday, unless we absolutely need something during that time.

There are endless meal planning and prepping options.  Try a few and choose what works best for your family. Your meals can be whatever you want them to be. If they are nutritious and convenient for you and your family, that’s what matters. Conquer your family’s busy schedule and mealtimes without a fuss!

Where is your money going!? Be Smart About Your Money

Times are tough for everyone. BUT I am here to tell you that you are not alone and there are ways to save money. You can save money if you want to, you just have to put your mind to it and stick to it. Those two factors alone can be nerve wrecking, but know that you can do this!

When I switched from my full time job to blogging, I had to adjust to not make money like I used and live off my husbands paycheck. We have to change the way we spend and think about money. Here are some ways that we have dealt with saving money:

  1. Have an emergency account: Things will happen and you will need money for it. Make sure to put money into this account as often as you can since you will need it for emergencies. This really isn’t a way to help you save money, but is a must since things do happen and you will want to take note of this!  A number that you want to save per month even if it is small something is better than nothing!!
  2. Meal Plan & Shop: This is where I am slacking.. its a work in progress!! I find it I’m more organized I can focus and not change my mind. Instead of buying those expensive TV dinners create your own. It’s simple I promise you. It only takes a few hours together everything to cook it and to save money. Make that extra time make it a habit to do it every week
  3. Compare Costs: If you are price shopping you’re losing money. You would be surprised how the simple list items can be two dollars or a dollar less at another store. Price comparison is for groceries and for large purchase items so make sure that you look around at all items.

It is important to always know where your money is and to constantly analyze it. Make sure you know that you are getting a bang for your buck always all the time and you will be on your way to saving!!

Meal Prep – Pasta!

Every once in a while we try to plan ahead with meals and do some serious cooking. A few weeks ago we had my mother in law in town and we decided to make gnocchi homemade with some Italian cookies! Plus homemade red sauce. UM yes to all of that!! My son loves some pasta so this was like a double win for us!

It’s times like this where meal prep is easier than ever. Double that recipe and freeze it! It’s so easy to do and will save you time. You don’t even have to cook the gnocchi before freezing it. When you want to eat it next time just pull it out and cook it. It’s super easy! You can add in some sausage or meatballs and garlic bread! It will literally save you time and a half, plus you will be able to eat healthy without any processed food!

So the best part about this as well is that we have homemade sauce! We literally filled up 3-4 cans after using some for our dinner. Freeze those and re use them whenever you are ready for your gnocchi or next pasta dinner! We all know how much pasta sauce can really be so this is a huge saving for us pasta lovers!

Side note.. we save the glass pasta sauce cans.: they come in handy for times like these! It’s perfect for these times!  Win – win all around!

Frugal About Tupperware

If you are anything like me you love Tupperware and can’t get enough of it! I always add to my tupperware collection in any way possible! We have our nice collection and then the collection of re usable. 

The re usable is referred to as the kind that we buy and keep and re use. Have you ever brought deli meat from a store that is in a container? Or maybe you brought apple juice in a nice large container! That is us right here. I don’t mind paying an extra dollar on one of those large OJ cans that has a dispenser on it! It’s perfect.

If you are like me you are about saving and being frugal… right! So keep those containers… keep them wash them and re use! Seems so silly to not do! OH and whenever we have Chinese we keep those too!

We use these containers when we have people rover and they take food home this way if we don’t get it back we don’t have to haunt them down!! Do you keep Tupperware whenever possible??? If not what do you do that’s frugal?  We want to hear more about it!
